Mom's Special Chocolate Chip Cookies
This is seriously the BEST cookie recipe I have ever used!
The cookies stay soft for days, if they last that long, which in our house, they don't.

Cook time: 10 minutes
Total time: 20 minutes
Yield: 12 cookies
Ingredients:
8 tablespoons (1 stick) of salted butter
1/2 cup white sugar
1/4 cup packed light brown sugar
1 tsp vanilla
1 egg
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips
Directions:
1. Preheat oven to 350 degrees Fahrenheit. Melt butter in small saucepan on low. Make sure it doesn't boil. In separate bowl combine flour, baking soda and salt, set aside.
2. In a stand mixer, with paddle attachment, beat the butter, sugar and brown sugar together until creamy. Add the vanilla and egg; beat on low until just combined (10-15 seconds). If you beat the egg too long the cookies will be stiff.
3. Add flour mixture into the stand mixers bowl. Mix until well combined, dough should be between "wet" dough and "dry" dough. Incorporate chocolate chips by hand.
4. Roll dough into 12 balls and place on a cookie sheet. Bake for 9-11 minutes, until the cookies are barely golden brown and puffy. DO NOT OVER BAKE. This is essential for keeping the cookies soft, even if they don't look done, pull them out.
5. Let cookies cool on the pan for around 30 minutes and then transfer to a plate. If they make it that long.

Cookie skillet
Make recipe the same as above, spread cookie dough out over the bottom of skillet and bake 10-12 minutes.
